The Volcanic Cuisine group, a proponent and ambassador of Garrotxa’s collective Volcanic Cuisine, comprises nine restaurants, which for the last twenty years have endeavoured to use and introduce local products from the volcanic area of Garrotxa into their food. These products include beans, purple potatoes, buckwheat, white corn, truffles, cornmeal porridge, piumoc sausage, sheep’s milk cheese and quality meat. All of these products are combined to create quality regional cuisine, aimed at both local residents and visitors, defined by its strong personality, regional specialities, creativity and diversification.
